Constantly, the chocolate is totally warmed and decrystallized before a new curve of crystallization, which allows the possibility to work  for many hours with  perfect chocolate, with a high fluidity.
In 20 minutes, the CRYSTAL 185-285  are fully operational for 8 hours or more of production.
