The principle of the cylindrical probe is that when the probe is forced into the interior of the sample to be tested, a shear force action causes the sample to deform or break. This produces a curve showing the load resulting from the deformation.
APPLICATIONS
Cylindrical probes are also useful for applying a shear force to a gel to determine its resistance to breakage and elasticity. Many standards cite cylindrical probes for gel tests. The Bloom value is a recognized standard for citing the strength of a gel structure, particularly gelatin.
